Hello everyone! So even though it is only the beginning of March, we do know that thanks to our friend Mr. Groundhog, we are to have an early spring/summer this year. What does that mean? Time to shed those Christmas pounds, 'Just Say No' to the Girl Scout cookies, and start eating a little better to fit in to that oh-so-cute and oh-so-teeny bikini.
When I was in college, I wanted a recipe that helped me eat healthy, shed weight, taste great, and cost next to nothing. That's when I developed my own version of stir-fry. Ladies, just a warning: this recipe is slam-packed full of fiber and protein which is wonderful for your waistline, but not so wonderful for staying at your boyfriends' house overnight. :)
For this recipe, you do not need to be an advanced cook. This might be one of the easiest, cheapest, best-tasting recipes out there for slimming your waist and impressing your taste buds!
This is the vegetarian version (which also helps with short-term weight-loss), however, sometimes I will cook chicken separate on the stove with a little asian stir-fry oil.
Just a quick note - liquid aminos you can find at a Whole Foods or Kroger in the organic section. This is a great, low(er) sodium version of soy sauce that is all natural and tastes great! They also make a version with a spray bottle so you use less and still achieve the flavor you are looking for! Pictured below:
